Peace family, with the chilly weather finally here, I’m happily pulling out all of my favorite recipes that warm me and my loved ones from head to toe!
There are many different ways of making taco soup, but my friend Alyssa’s is best that I have ever tried. Alyssa Welborn made this one night at Bible study when we were in college, and every time I make it, it always reminds me of her. It’s easy and it’s absolutely delicious!
Alyssa Wellborn’s Taco Soup
2 cans whole kernel corn
2 cans Ranch Style or chili beans
2 lbs. ground beef
1 whole, chopped onion
1 package taco seasoning
1 package Hidden Valley Ranch Dressing mix (powder, not liquid)
Brown meat and drain grease. Add chopped onion to beef. Add seasoning and dressing mix. Simmer for 20 minutes. For more liquid, add more canned corn. Serve with tortilla chips, sour cream, and shredded cheese.
