Peace family, I have a new favorite snack, and it’s so easy to make! Although bacon-wrapped dates sound odd if you’ve never tried them, my housemate, Teresa, introduced me to them, and I am hooked! The sweet and soft date wrapped up in the chewy, salty bacon is absolutely phenomenal.
To make a batch, you will need a package of bacon, preferably Farmland uncured but hickory-smoked bacon. You will also need about two cups of Medjool dates (you can use Deglet Noor dates, but their smaller size doesn’t work as well with the bacon.) Finally, you will need about two cookie sheets to bake them on, and it’s even better if you put parchment paper down to keep them from sticking.
Slice the package of bacon in half down the center, so that every slice is halved.
Remove the pits from the dates, wrap 1/2 slice bacon around each, and pin with a toothpick. Bake in oven at 400 degrees F for 20 – 23 minutes (Teresa and I like our bacon a bit crispier, so we cook it for at least 23 minutes). Enjoy them warm from the oven, or keep refrigerated and enjoy cold. You can also briefly heat them up in the microwave when you are snacking. Bon Appetit!
