Peace family, I recently went on a trip to Greece, and the food was so good, that I bought four cookbooks! I’ve been newly inspired in my cooking, and since coming back, I’ve almost exclusively cooked Greek food. One fresh dish that they served everywhere was a horiatiki (it means “village”) salad. It’s easy, it’s delicious, and it’s ubiquitously Greek!
Horiatiki Salad
3 ripe tomatoes
1 cucumber
1-2 green bell peppers
1 medium onion (purple is prettiest and seems to taste less harsh)
feta cheese to top it (about a big hamburger patty’s worth, cut into chunks)
6-12 black or kalamata olives
1/2 cup olive oil (preferably extra virgin… and Greek!)
2 tablespoons vinegar
salt, pepper, oregano
Slice the tomatoes, cucumber, bell peppers, and onions and arrange attractively in a salad bowl. Sprinkle on some salt, pepper and oregano, then add the olives and feta cheese cubes on top of the salad. Pour the oil and vinegar over the top, and enjoy! 🙂
