Peace family, this isn’t seasonal, but I thought it might be fun to share my salmon patty recipe with you! It’s very simple, and I made some this week with my friend Heidi. It is definitely a comfort food, at least with my family! 🙂
Mix 1/4 cup of cornmeal, 1 egg, and one tall can of salmon, drained, together. Let it rest for about five minutes, then form it into patties that aren’t too thick (it will make about eight).
Heat a little olive oil in a frying pan (I used a cast iron skillet) and fry the patties on medium-high heat for about ten minutes or until the outside is as crispy as you like and the inside is warmed through. You should only need to flip them about once or twice, but obviously, check the bottoms to make sure they aren’t getting burned/the heat is too high.
My family always serve them with plenty of ketchup, and usually black-eyed peas, rice, and coleslaw on the side. Hope you enjoy it!
